2 1/4 c flour
1 tsp baking soda
1/2 tsp salt
2 Tbs grated fresh ginger
12 Tbsp (1 1/2 sticks) room temperature butter
1 c sugar (plus more for rolling)
1/4 c molasses
1 egg

Directions:
Directions:
Combine flour, soda and salt. Beat ginger, butter and 1 cup sugar until light and fluffy. Beat in molasses and egg. Beat in flour mixture until just combined. Chill 1 hour. Heat oven to 325º. Roll dough into 1 1/2" balls and then roll them in sugar. Place 2" apart on ungreased baking sheets. Bake until edges start to brown, about 12-13 minutes. Centers will be slightly soft. Let stand on cookie sheets 1 minute and remove to racks to cool completely.

NOTE: These should be chewy/moist cookies, don't overcook. I chill only briefly so the dough is not too stiff. If my molasses is very think I thin it with a bit of water.
