NOTE: I double the recipe below

1 1/4 c flour
1/2 tsp baking soda
1/2 tsp salt
1 c chunky peanut butter
1/4 lb (1 stick) room temperature butter
1/2 c brown sugar
1/2 c sugar
1/2 tsp vanilla
1 egg
1 cup (6 oz) semi sweet chocolate chips

Directions:

Heat oven to 350º. Combine the flour, soda and salt. Cream the peanut butter and butter. Beat in the sugars and then the vanilla and egg. Beat in the flour mixture (dough will be very stiff). Stir in the chocolate chips. Spoon the dough by rounded tablespoons onto ungreased cookie sheets and flatten slightly with 3 fingers. Bake until the edges of the cookies are firm but center is still moist, about 8-10 minutes. (Do not overcook).
