1 c. whole wheat flour
2/3 c. shredded cheddar cheese
1/4 c. chopped almonds
1/2 tsp. salt
1/4 tsp. paprika
6 T. corn oil
2 c. cooked salmon
1/2 cup liquid (water or water combined with white wine)
3 beaten eggs
1 c. sour cream
1/4 c. mayonnaise or salad dressing
1/2 c. shredded cheddar cheese
1 T. diced (or grated) onion
1/4 tsp. dried dillweed
3 drops tabasco

Directions:

For crust, combine the whole wheat flour, 2/3 c. cheese, almonds, salt, paprika. Stir in oil. Set aside 1/2 c. of the crust mixture. Press remaining mixture into bottom and side of 9 inch pie plate. Bake crust in 400 degree oven for 10 minutes. Remove from oven. Reduce oven temperature to 325 degrees.
For filling, blend together eggs, sour cream, mayonnaise and 1/2 c. liquid. Stir in salmon (be sure to flake to remove bones, if necessary), 1/2 c. cheese, onion, dillweed, and tabasco. Pour filling into crust. Sprinkle with reserved crust mixture. Bake in 325 degree oven 45 minutes or until firm in center.

This is delicious and worth the prep time. It originally called for canned salmon with the reserved liquid but I use salmon that Dick has smoked and just add a little water with wine. The crust is what really makes the quiche - crunchy and flavorful!
