3 c. shredded, cooked chicken
12 oz. sharp cheddar cheese, shredded
2 1/2 c. enchilada sauce (red or green)
1-2 4oz. cans chopped green chilies
1/2 c. minced fresh cilantro (optional)
salt and pepper
soft corn tortillas

Heat oven to 400º
Combine the chicken, 2 c. of the cheddar cheese, 1/2 c. of the enchilada sauce, the green chiles, cilantro. Season with salt and pepper to taste.

Microwave the tortillas in plastic wrap or damp paper towels until warm and pliable 40-60 seconds.
Spread the warm tortillas over a clean counter. Place 1/3 c. of the chicken mixture evenly down the center of each tortilla. Tightly roll the tortilla around the filling, then lay seam-side down in a 9x13 inch baking dish that is lightly coated with vegetable oil spray.
Lightly spray the enchiladas with vegetable oil spray. Pour the remaining sauce over the enchiladas. Cover the baking dish with foil and bake until the enchiladas are heated through, 20-25 minutes.
Remove the foil and continue to bake until the cheddar browns, about 5 minutes longer.
