1c flour
2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground cloves
1 c sugar plus 1/2 c more for baking
1/2 c canola oil
1 large egg at room temp
1/2 c unsulfured molasses

Preheat oven to 375º Grease 2 large baking sheets. Sift together first 6 items. In large bowl use an electric mixer and beat the 1 c sugar, oil, egg, & molasses. Then beat in dry ingredients. Pour the 1/2 c sugar in pie plate. Shape the cookie dough into 1" balls, roll in sugar and flatten with bottom of a juice glass. Arrange on baking sheet 1" apart. Bake about 12 minutes for chewy cookies. Let cookies stand on sheet for 1 min. then transfer to wire rack.
