1/2 lb sweet butter, softened
1/4 lb superfine sugar (about 1/2 cup)
1/4 lb ground almonds (1 cup)
2 1/4 cups flour
1 tsp vanilla
Confectioners sugar

Directions:
Directions:
Cream butter and sugar.
Add vanilla and mix.
Add almonds and mix gently.
Add flour and mix gently until dough is smooth and all ingredients are incorporated.

Take a small handful of dough and roll it out into a thin log. Cut into pinkie size pieces (about 2 inches long) . Place on cookie sheet and bake in 350 º oven for 10-12 minutes, no longer. Remove pan from oven and let cool a few minutes while you put in next pan. When cookies are cool, coat all with confectioners sugar.

I put my confectioners sugar in a zip lock bag and throw in several cookies at a time, shake to coat, and remove to tin. Be sure cookies are cool before coating.
