12 oz jumbo shell macaroni
1/2 lb sweet Italian sausage*
45 oz spaghetti sauce
2 10 oz pkg frozen chopped spinach
2 eggs
1 lb ricotta
1/2 lb mozzarella, shredded
1 tsp onion salt
1/4 tsp garlic powder
1/8 tsp nutmeg
2 Tbsp grated Parmesan cheese

For vegetarian version, omit or substitute vegetarian sausage such as Whole Foods 'Field Roast' sausage

Preheat oven to 350º
Cook shells until al dente, drain in a colander, rinse with cold water.
Peel off sausage casings, crumble meat into a large skillet and brown over medium heat. Drain. Add spaghetti sauce to the meat, cover and reduce heat to low. Simmer for 15 minutes.
Place thawed spinach in a strainer and press out excess moisture by hand. Chop coarsely. In a large bowl beat eggs slightly. Add spinach, ricotta, mozzarella, onion salt, garlic powder and nutmeg
Pour 1/2 cup sauce mixture into 3 qt casserole dish or 9x13 pan. Stuff each shell with rounded tablespoon of filling. Arrange shells in a single layer in the dish Tuck in broken shells, Pour remaining sauce over shells, sprinkle with Parmesan cheese. Bake at 350º for 30 minutes.
