3 T. unsalted butter
2/3 c. sugar
1/4 tsp. salt
3 large egg yolks

3 T. flour
1 c. milk

6 T. lemon juice
Lemon Rind

Directions:
Directions:
Cream butter, sugar and salt. Beat egg yolks. Add to mixture. Add in flour, milk and lemon. Butter baking cups. Add filling. Fill empty cups with water. Bake at 325º for 20 minutes. Dust with powdered sugar.
