Zucchini Bread or Muffins Recipe

4 eggs
2 c sugar
1 c oil * can substitute 1/2 c oil, 1/2 c applesauce + 1/4 c milk
3 1/2 c flour
1 1/2 tsp baking soda
1 1/2 tsp salt
3/4 tsp baking powder
1 Tbsp cinnamon
optional: grating of nutmeg
1 tsp vanilla
3-4 c grated zucchini
1 c walnuts (optional)
1 c raisins or dates (optional)

Directions:
Directions:
Beat eggs, gradually beat in sugar then oil and vanilla. Combine dry ingredients. Add to first mixture alternately with zucchini. Stir in raisins and nuts.

Turn batter into two greased and floured loaf pans. Bake at 350 degrees for about 50 minutes.

OR, pour into two 12-muffin tins. Bake at 375 for 20-25 minutes (check).

Variations:
- 1/2 c whole wheat flour, 1 c oat flour, 1 1/2 c white flour
- Healthy: 1 1/2 c whole wheat flour, 1 c white flour, 1 c oat bran, 1/2 c olive oil, 1/2 c applesauce, 1/4 c milk
- Substitute 1/2 c oat bran for 1/2 c of flour, 6 c zucchini, 3/4 c oil, 1 c chopped dates
- Add grated lemon peel, substitute juice of of 1 lemon for part of the oil.
- Substitute light brown sugar
