4 Tbsp butter
4 carrots
2 baking potatoes
2 leeks
6 c beef broth (you can use vegetable as well)
¼ tsp thyme
¼ tsp sage
1 tsp garlic
1 c milk
8 oz sharp cheddar cheese
salt and pepper to taste

Directions:
Directions:
Chop the vegetables.
Melt the butter in a large soup pan and sauté the vegetables until they start to soften, 5-8 minutes.
Add the broth and seasonings and bring to a boil.
Reduce heat, cover and simmer for 30 minutes.
Remove from heat and puree in a blender or food processor.
Return to heat and add milk, being careful to not let it boil.
Slowly stir in the cheese.
