2 ripe avocados, in large cubes
16 oz. cooked shrimp (I bought a bag of frozen shrimp and thawed them)
2-4 limes for juice (to taste)
1-2 tablespoons of Olive Oil
Cilantro to taste (optional)
1 small purple/red onion, very small, cubed
salt and pepper to taste

Mix avocados with part of the lime juice, do not mash. Mix remaining lime juice with olive oil and cilantro. Layer on a long low dish: Half of each in this order: Avocado, Shrimp, Onion, Lime Juice. Repeat layers. Serve with tortilla chips or sliced crusty bread.

This is an excellent lunch salad as well. (As pictured it should have more avocado, one of mine was bad when I went to make it.)
