1 pkg active dry yeast
1 c. warm water
1 t. sugar
1 t. salt
2 T. olive oil
2 1/2 c. flour

1 T. cornmeal
1 1/2 c. mozzarella cheese, grated
1/4 c. Parmesan cheese
10 pieces pepperoni or 4 slices ham
1/2 t. oregano
1/4 t. garlic powder
1 T. olive oil
1 T. tomato sauce (opt)

Dissolve yeast in warm water. Stir in remaining dough ingredients; beat vigorously 20 strokes. Let rest 5 min. Knead the dough on a lightly floured surface for 10 min. Place dough in a lightly oiled bowl and cover with plastic wrap. Refrigerate over night or let rise for 1 hr at room temp.

Heat oven to 425º. Lightly coat a pan with oil and sprinkle with cornmeal. Separate dough into 4 pieces and roll each piece into a rectangle. Brush each with 1 t. olive oil. Place grated cheeses, meat, seasonings and any optional ingredients on half of dough or in the center. Lift side edges together; fold down to center over filling. Pinch edges to seal. Place on pan and bake for 15 min.
