Directions:
Directions:
Line a 11 x 13 pan with aluminum foil. Also have enough to cover top.Use red potatoes, and cut into wedges, leaving the skin on. Chop one large onion and 2 cloves of garlic. Add one stick of butter - cut into 6 pieces with onion and garlic to potatoes. Add 1 cup shredded, sharp cheddar, 1 cup Monterrey cheese, salt and pepper and a pinch of basil. Cover with foil. Cook for 1 hour at 350 F or cook over the campfire for about an hour, rotating the pan several times. This is also good with red, yellow and green peppers added.
