3/4 cup sugar
1/3 cup flour
1/4 teaspoon salt
2 cups milk
3 egg yolks, beaten
2 tablespoons butter
1 1/4 teaspoons vanilla
1 9 inch pie crust, baked
4 bananas, sliced
Optional: vanilla wafers

Directions:
Directions:
Bake pie shell in 350 degree oven until lightly golden. Remove from oven and cool. In a medium saucepan, combine sugar, flour, and salt. Stir while gradually adding milk. Continue to stir while cooking over medium heat until bubbly. Continue to stir and cook 2 more minutes. Remove from heat.
Stir some of the hot mixture into the beaten egg yolks, then quickly add the egg yolk mixture to the rest of the hot mixture. Cook 2 minutes, while continuing to stir. Remove from stove, add butter and vanilla. Stir until mixture is smooth in consistency.
ASSEMBLE PIE
Slice banans into the cooled baked pastry shell. Add a single layer of vanilla wafers. Top with pudding mixture. Sprinkle crunched up vanilla wafers on top.
Bake at 350º for 12-15 minutes. Chill for at least an hour before serving.
