2 lb boneless leg of lamb, cut into 1” pieces
3 onions, quartered
3 celery stalks, sliced thin
1 3/4 lb potatoes, cut into 1 inch cubes
1 - 14 oz chicken broth
1 tsp salt
3 large carrots, cut into 1 inch pieces
1 tsp pepper
1/4 c fresh parsley

Place all ingredients into slow cooker. Cook on low for 8 hours.
