2 Pints Brussel Sprouts
Olive Oil
Salt and Pepper to taste

Oil/Bacon Fat
1/4 C Golden Raisins
1/4 C Maple Syrup
1/4 lb Panchetta

Directions:
Directions:
Clean Brussel Sprouts - cut in half if too big
Drizzle with Olive Oil, salt and pepper
Toss to coat.
Back in 425ºF Oven for 20-40 minutes until tender (depends on sprout size

Cut panchetta into bite size pieces
Render panchetta in bacon fat until crispy
Add roasted Brussel Sprout and saute until crispy
Remove from heat, add maple syrup and raisins
Toss; salt and pepper to taste
Serve hot
