1 lb of beef liver
2 large sweet onions - thinly sliced
2 tbls oil
flour
1/3 tsp salt
1/4 tsp pepper

Directions:
Directions:
Combine flour, salt and pepper. Cover the liver with warm water and let set for 5 - 10 minutes. Pour off water and drain well. Dredge liver through the flour, salt and pepper mixture. Add 2 tbls of oil to a large oven proof pan or skillet ( I use an iron skillet). On stove top, lightly brown liver in skillet over medium heat. Add enough boiling water to cover the liver. Bake 20 minutes in a 325° F oven. Remove from oven, stir and add thinly sliced onions. Return to oven and bake for 20 more minutes.
