3 Tbl olive oil
4 cloves garlic, minced
2 spanish onions
1 red bell pepper, seeded and diced into 3/4 inch pieces
1 yellow pepper, seeded and diced into 3/4 inch pieces
2 pounds ground beef
2 cans (1 lb each) dark red kidney beans
4 c. canned ground or crushed tomatoes
2 c. tomato juice
2 c. beef or chicken stock or broth
1 tbl ground cumin
1 tbl chili powder
2 tsp dried oregano
2 tsp dried basil
1 tbl balsamic vinegar
6-8 dashes Tabasco sauce
salt and pepper

Heat stockpot over medium-high heat. Add the olive oil, garlic, onions and bell peppers. Saute for 7 minutes. add the ground beef and cook, stirring frequently, until the meat is browned- about 10 minutes. Add the beans, tomatoes, tomato juice, stock, chili powder, cumin, oregano and basil. Bring to boil. Reduce heat and simmer for 1 1/2 hours. Season with vinegar, Tabasco and salt and pepper.
Good topped with diced avocados and shredded Jack cheese.

This chili recipe comes from Marjorie Drucker who owns and operates the New England Soup Factory in Newton and Brookline. I've made it so often I typed the recipe by memory. It freezes well so I usually double it... It's a great winter supper.
