1-1/2 lb. extra-lean ground beef
1 (14-oz.) can diced tomatoes with zesty jalapeņos
1 (11-oz.)can corn with peppers, drained
1 (16-oz.) pkg. prepared polenta
1/4 onion, chopped
3 T tomato paste
1 (2-oz.) can black olives, drained
2 T chili powder
1 C shredded reduced-fat pepper Jack or sharp Cheddar cheese

Directions:

1. Preheat oven to 375 degrees.

2. In a large nonstick skillet over medium heat, cook beef & onion for 5 minutes or until browned, breaking up meat with spoon.

3. Add tomatoes (with juice), tomato paste, corn, olives & chili powder.

4. Simmer for 5 minutes, then scrape into 2-1/2 quart baking dish.

5. Cut polenta lengthwise into quarters, then slice across quarters into wedges 1/4-inch thick. Scatter over meat and top with cheese.

6. Bake 25-30 minutes or until cheese is melted & everything is bubbling.
