1 c raisins
1/2 c water
3/4 c sugar
1/2 c flour
sprinkle of salt
4 eggs, separated
6 tbls butter
1 tsp vanilla
2 c milk
1/4 tsp cream of tarter
1/2 c sugar
Directions:
Directions:
Simmer 1 cup raisins in 1/2 cup water until tender. Mix 3/4 cup sugar and 1/2 cup flour and a sprinkle of salt. Separate 4 eggs (save whites for meringue). Add 6 tbls butter, 4 yolks, 1 tsp vanilla and 2 cup milk. Stir and cook over medium heat until thickened, add raisin and cook a little. Cool. Pour into baked pie crust.
Top with Meringue:
Beat 4 egg whites until foamy, add 1/4 tsp cream of tarter. Continue beating on high, gradually adding 1/2 cup sugar. Beat until very stiff and holds peaks. Bake at 350° F for 12 minutes.
