1 PKG LEMON JELLO
1 PT BOILING STRAINED TOMATO JUICE
1/2 TSP SALT
2 C MINCED VEGETABLES (CARROTS, STRING BEAN, PEAS, CELERY)

Directions:
WASH TOMATOES, REMOVE CENTER. PLACE TOMATO CASE UPSIDE DOWN ON PLATE AND SET IN COOL PLACE UNTIL READY TO FILL. DISSOLVE JELLO IN BOILING TOMATO JUICE; ADD SALT. CHILL. WHEN SLIGHTLY THICKENED FOLD IN VEGETABLES AND FILL TOMATOES WITH MIXTURE. CHILL TILL FIRM.
TO SERVE, CUT EACH TOMATO INTO QUARTERS, USING SHARP KNIFE DIPPED IN HOT WATER. ARRANGE ON CRISP LETTUCE, GARNISH WITH MAYONNAISE. SERVES 8
