1/2 cup dry-pack sun-dried tomatoes
1 8-ounce package whole wheat angel hair pasta
1 Tbsp extra-virgin olive oil
2 onions coarsely chopped
1 tsp dried oregano
1 10 oz package of fresh spinach (or frozen, thawed and squeezed dry)
2-3 Tbsp chopped and pitted kalamata olives or sliced black olives
1 cup feta cheese crumbled

Directions:
Directions:
1. Soak tomatoes in hot water for 10 min. or until soft. Drain and chop.

2. Cook pasta according to package directions, Drain.

3. Meanwhile, warm oil in a large skillet over medium heat. Add onions and oregano, cook 10 min., or until onions are tender.

4. Add spinach, cover and cook 5 min. or until it wilts.

5. Add olives, tomatoes and pasta. Toss to mix. Sprinkle with feta and serve.

Serves 4.
