1 cup pancake mix
2/3 cup milk
2 tbsp vegetable oil
1 egg, beaten
¼ cup butter or margarine
1/3 cup packed brown sugar
1 medium apple, peeled, sliced Golden Delicious
½ tsp cinnamon, if desired
Raisins, if desired

Maple Syrup Sauce:
½ cup maple syrup
½ cup brown sugar
¾ cup sour cream

Directions:

1. In a bowl, combine pancake mix, milk, oil, egg and cinnamon. In an 8-in. oven proof skillet, melt butter. Stir in brown sugar and apple slices (and raisins if used); sauté until sugar is dissolved and apples are tender. Pour batter over apple mixture. Cook, uncovered, over medium heat until bubbles form on top of pancake.

2. Once done, Invert onto a serving platter. Mix together ingredients for sauce and serve with pancakes. The can be refrigerated up to 3 weeks.

Bake at 350º for 12 minutes.
