1 lb. pork tenderloin
1/2 t freshly ground pepper
1/2 t each sage, thyme, ginger, cinnamon
2 T cooking oil
1 onion, minced
1 lg. apple, peeled/cored/coarsely chopped
1/2 C apple cider (or apple juice)

Directions:
Directions:
1. Slice tenderloin crosswise into 8 medallions.

2. Mix seasonings together & coat pork.

3. Heat oil in large skillet; sauté pork on both sides to brown. Remove pork & cover to keep warm.

4. Add onions & apples to skillet. Saute until golden.

5. Add apple cider to skillet, heat to simmer. Put pork in simmering liquid, cover, & simmer for 5 minutes
