Ingredients: Dressing: 1 cup mayonnaise or Miracle Whip 1/4 white sugar 3 tablespoons apple cider vinegar 2 tablespoons milk 4 teaspoons celery seeds, optional 1 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/8 teaspoon cayenne
3 cups shredded green cabbage (about 1/2 head cabbage) Use a whole head if not using the red cabbage. 3 cups shredded red cabbage (about 1/2 head cabbage), optional 1 green bell pepper, finely diced 4 stalks celery, sliced thin 1 large carrot, peeled and shredded 1/2 cup yellow onion, finely diced

Directions:In a bowl, combine the mayonnaise, sugar, vinegar, milk, celery seeds, salt, pepper, and cayenne, and whisk well to dissolve the sugar.
In a large bowl, combine the remaining ingredients. Toss with the dressing until evenly coated. Adjust seasoning, to taste. Place in the refrigerator, covered, to chill slightly before serving.

Notes: Before I received my food processor for Christmas, I used to make this cole slaw in a blender. Put your cabbage in a blender, not too large of pieces, and add water to cover. Blend until cut to desired consistency. Drain WELL and then squeeze out remaining water in a cotton kitchen towel. Add remaining ingredients and add dressing and place in refrigerator to chill before serving. Of course, you can always use a box grater if you want to go to that trouble, but I'm not a patient person!!!
