Sponge cake
1 cup boiling water
1 1/2 tablespoons dry instant coffee
1/2 cup marsala
1/2 cup of grated dark chocolate

4 eggs
1/3 cup of castor sugar
1/4 cup marsala
2 cups (500 grams) marscarpone cheese

300 mls thickened cream (whipped)
75 grams of dark chocolate extra for top

Marscapone Filling: Beat egg yolks and sugar in a small bowl with an electric mixer until thick and creamy. Add marsala and mascarpone (I add about 200 mls of thickened cream as well, this is not in the recipe) and beat until combined.
Tiramisu Method: Combine boiling water, coffee and marsala in a small bowl and cool. Line a clean 19cm square dish or cake pan with plastic wrap. (I do not do this, I just lay it straight into the dish). Place one layer of sponge cake sliced to about 1/2" thickness onto the bottom of the dish then brush coffee mixture over cake, spread with mascarpone filling, sprinkle with grated chocolate. Repeat layers ending with cake. Cover and refrigerate overnight. Cover with whipped cream and chocolate curls.
