1 tbls. oil 1 pkg. frozen peas
2 lbs. Italian Sausage Salt and pepper (to taste)
1 onion, chopped
2 cloves minced garlic
1 tbls. chili powder
2 tsp.. cumin powder
1 tsp. dried oregano
2 qts. chicken broth
2 lbs. cubed butternut squash
3 (15 OZ) cans Hominy - drained
1 pkg. frozen peas
salt and pepper to taste.

Directions:

Cook sausage till crumbly in oil.
Add onion, garlic. Cook about 5 mins.
Stir in chili powder, cumin, oregano, broth and bring to boil.
Add squash - bring to boil again and reduce heat. - cook for 15 minutes.
Add hominy and peas - cook for about 3 minutes.
Add salt and pepper to taste
