1 cup brown sugar (or 1 cup white sugar)
1 cup white syrup (or 1 cup dark Karo syrup when using white sugar)

2 t baking soda
1/8 t cream of tartar (add to baking soda)

Variation.
Add 1T vinegar to sugar while it cooks

Don't add 1/8 t cream of tartar to soda

Directions:
Mix brown sugar and corn syrup together before cooking. Then on medium heat, stir constantly sugar and syrup (and vinegar if using) until it boils and the sugar is completely dissolved. Continue cooking to hard boil stage (290 degrees) using a candy thermometer. Take pan off heat and add baking soda. Stir quickly and completely to mix in the soda - which will foam.

Pour foaming mixture into foil and buttered 8" x 8" or 9" x 9" pan . Do not spread mixture - it will spread itself. Be careful not to move or jar the pan while it cools.

When cool, break into small pieces. Melt chocolate coating. Dip pieces in melted chocolate coating.

Note: I tried this recipe several ways in 2021. It is important to stir brown sugar and syrup until sugar is completely dissolved. Then cook without stirring until reaches 290 degrees. I prefer the taste of brown sugar and corn syrup mixture. But White sugar with dark Karo syrup worked well. White sugar dissolves sooner than brown sugar.
