1/2 round onion (chopped)
3 bay leaves
10 peppercorns (crushed)
2 1/2 lb. pork (cut into 1 inch cubes)
1/2 c. oil (for frying)
1/2 c. shoyu
6 Tbsp. apple cider vinegar
3 Tbsp. dark brown sugar
1/4 c. water
8 cloves garlic (crushed)

Directions:
Directions:
1. In a large bowl combine onion, bay leaves, peppercorns, shoyu, vinegar, brown sugar, water, and garlic. Stir until all ingredients are well blended.
2. Pour mixture over pork and let stand for 1 hour.
3. Heat oil in a saucepan. Place pieces of pork in the pan and brown all sides.
4. Pour remaining mixture into pan and simmer until tender.
5. Adobo should be dry with very little sauce remaining.
