1 tsp. fresh minced ginger
3 Tbsp. shoyu
1 Tbsp. white vinegar
2-3 cloves minced garlic
1 Tbsp. sugar
2-3 fresh Hawaiian chili peppers (minced with seeds)
1 tsp. cornstarch
3/4 lb. long eggplant (sliced into 1/2 inch pieces)
3/4 lb. ground chicken, turkey, or pork
vegetable oil
Chinese parsley for garnish

Directions:
Directions:
1. Mix the ginger, shoyu, vinegar, garlic, sugar, chili pepper, and cornstarch together. Set aside.
2. In a large skillet saute the eggplant in oil until slices are slightly browned. Set aside.
3. Saute the chicken until browned.
4. Return the eggplant to skillet and add the sauce.
5. Cook until thoroughly heated.
6. Garnish with parsley.
