1 package Ritz crackers (preferably Holiday)
1 jar peanut butter (creamy)
2 lbs. chocolate

Directions:
Directions:
1. Begin slowly melting chocolate on stove.
2. While the chocolate is melting, assemble cookies by spreading peanut butter on one side of a Ritz cracker and then adding another Ritz cracker to "sandwich" the peanut butter.
3. Repeat until you have made 2 or 3 dozen Ritz/peanut butter "sandwiches".
4. By this time the chocolate should be melted.
5. Lay out a couple of pieces of wax paper on the kitchen table to hold the cookies while they harden.
6. Using a fork(a spoon helps to ladle) dunk the "sandwiches" in the melted chocolate making sure to get full coverage without too much excess.
7. Place the cookies on the wax paper and allow to harden*.

*If the mood strikes,at this point you can also add sprinkles to the tops of the soft cookies - I prefer plain.
