2 T butter
1/3 c (2 med) shallots, chopped
1/2 lb chopped mushrooms (baby Bella)
5 tsp fresh thyme
3/4 c heavy cream
4 lg eggs
salt and freshly ground pepper
1/2 cup grated Gruyere cheese
1 pie crust

Oven @350-pre-bake crust for 10 mins.

Melt butter over med-low heat. Add shallots. Saute 5-6 mins. Add mushrooms. Sprinkle w/salt and pepper. Increase heat and saute until liquid is absorbed (5 mins?) Sprinkle w/thyme and saute 1 more minute. Let cool.
Whisk eggs, cream, a dash of S&P and cheese. Add the mushroom mixture to the egg mixture. Stir well together. Pour into pre-baked pie crust and bake 30 mins or until toothpick comes out clean. Let cool 15 minutes and enjoy!
