Banana Pudding Recipe

1 cup sugar
2 heaping Tbsp. flour
2 cups milk (divided)
pinch of salt
2 egg yolks, beaten
2 tsp. butter
1 tsp. vanilla
2 bananas
Nilla wafers

Meringue:
2 egg whites
1/4 cup sugar

Directions:
Directions:
1) To Make Pudding: In a medium saucepan, combine sugar with flour. Mix well, then stir in half the milk. Beat egg yolks and whisk into sugar mixture. Add remaining milk and butter.

2) Place mixture over low heat and cook until thickened, stirring frequently. Remove from heat and stir in vanilla extract.

3) Layer Nilla wafers to cover bottom of 9 inch pie dish, add one sliced banana over wafers and 1/2 of pudding while still hot. Repeat layers and pour remaining pudding sauce over.

4) To Make Meringue: In a large glass or metal bowl, beat egg whites until foamy. Gradually add 1/4 cup sugar, continuing to beat until whites are stiff. Spread meringue into pie pan, making sure to completely cover pudding layer.

5) Bake in preheated 350º oven for 15 minutes or just until meringue is golden brown. Chill before serving
