1 (12-ounce) can whole kernel corn, drained
1 small onion, chopped
½ c chopped green pepper
2 T minced fresh parsley

2 T cider vinegar
1 T vegetable oil
¼ tsp. salt
¼ tsp. pepper

Directions:
Combine first 4 ingredients, adding some red pepper for color and flavor, if desired. Combine the next 4 ingredients and add to the corn mixture. Cover and chill and least 4 hours.
