4 (1/2-inch thick) boneless pork chops
½ tsp. salt
¼ tsp. pepper
2 T butter or margarine, melted
1 large Granny Smith apple, cored and sliced
¼ c golden raisins
1 tsp. grated lemon rind (optional)
½ c apple juice

Directions:
Directions:
Sprinkle pork chops with salt and pepper. Brown chops in butter in a large skillet over medium-high heat. When brown, top with apple slices, raisins and lemon rind. Add apple juice. Cover, reduce heat and simmer 30 minutes or until pork chops are tender.
