1 1.2 lbs. boneless roast such as round, etc.
2 c beef broth
1 ½ cups chopped onion (about 3 medium-size)
Garlic to taste
1 T paprika
1 ½ tsp. salt or to taste
¼ tsp. freshly ground pepper
\1/8 tsp. marjoram
¼ c slivered green pepper (about 1 small)
¾ c white wine
½ c water

¼ c flour
½ tsp. paprika
1T water

Directions:

Cut boneless roast into 1 1/2 -9nch pieces. In heavy Dutch oven, sauté onion and garlic in bacon fat until tender, stirring occasionally. Remove onion and garlic with slotted spoon to small bowl.

Add meat to bacon fat and slowly brown on al sides, stirring occasionally. Sprinkle evenly over meat a mixture of paprika, salt, pepper and marjoram. Stir in onion, garlic and chopped green pepper. Slowly pour in meat broth and white wine. Bring to boiling. Reduce heat, cover sauce pot and simmer 2 to 2 1/2 hours or until meat is tender when pierced with a fork. Remove meat with slotted spoon to a hot serving dish. Thicken liquid as desired.

To thicken cooking liquid: Pour water into a 1-pint screw-top jar and sprinkle flour and paprika into mixture. Cover jar tightly and shake until mixture is well-blended. Or, you may whisk flour, water and paprika until-well blended. Slowly pour one-half of the flour mixture into the sauce pot, stirring constantly to avoid lumps. Bring to a boil, gradually adding remaining flour mixture as needed for the consistency desired. Add meat to reheat and serve immediately.
