1 ½ lb. fresh asparagus spears or 2 (14 1/2 –once cans) asparagus spears, drained
1 green pepper or red pepper, chopped
1 small bunch of green onions with tops, chopped
1 stalk celery, finely chopped

¾ c vegetable oil
½ c red wine vinegar
½ c sugar
1 small clove garlic, minced
11/4 tsp. paprika

Remove tough ends of asparagus spears. Remove scales from stalks with a knife or peeler, if desired. Cook asparagus, covered, in boiling water for 6 to 8 minutes or until crisp-tender. Drain. Note: canned asparagus need not be cooked.

Place asparagus in a 13 x 9 inch baking dish. Combine green pepper and next 7 ingredients; stir well and pour over asparagus. Cover and chill at least 4 hours. Drain before serving; garnish with pimento.
