2 small heads of Bibb lettuce, torn into bite-size pieces
1 lb. fresh spinach, torn into bite-size pieces
2 oranges, peeled, seeded and sectioned (or, 1 (11-oz.) can mandarin oranges, well-drained)
˝ medium red onion, sliced and separated into rings
˝ c coarsely chopped walnuts
2 tsp. butter or margarine, melted

Place first 4 ingredients in a large bowl. Sauté walnuts in butter until lightly browned. Add to lettuce mixture. Toss with dressing when ready to serve.

Yield: 6 to 8 servings

Dressing:
1 c vegetable oil
˝ c vinegar
˝ c sugar
1 tsp. salt
1 tsp. celery seeds
1 tsp. dry mustard
1 tsp. paprika
1 tsp. onion, grated

Directions:
Combine all ingredients in a jar. Cover tightly and shake well. Chill several hours. Shake again before serving over salad. You may not need all of this dressing.

Yields: 1 3/4 cups
