6-8 red potatoes
2-3 Tbsp Vidalia onion, chopped
2-3 hard boiled eggs, chopped
dressing:
about 1/4 to 1/2 cup olive oil
2-4 Tbsp cider vinegar
celery seed
salt & pepper
or use 1/2 cup Italian dressing

Directions:
Directions:
1. Boil potatoes with skins on, cook until fork tender, drain water. Let cool, remove skins, then cut into bite size pieces.
2. In large bowl, add potatoes, chopped onions and eggs. Sprinkle celery seeds, salt & pepper. Pour dressing ingredients over mixture to taste and mix gently.
3. Refrigerate. May need to add more dressing the next day.
