3 eggs
2 c sugar
2 c zucchini, peeled and grated
1 c vegetable oil
3 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
½ tsp. baking powder
3 tsp. cinnamon
1 c walnuts, chopped

Directions:
Directions:
Beat eggs until light and fluffy. Add sugar, oil, zucchini, vanilla, and mix lightly but well. Combine flour and other dry ingredients and add to egg mixture. Add nuts. Stir until blended.

Place batter in 2 -9 x 5 x 3 –inch loaf pans. Bake at 350 degrees for an hour until tester comes out clean. Cool 15 minutes before removing from pans.
