1 1/2 c. cake flour
1 1/2 c. sugar
1/2 tsp. salt
1 Tbsp. baking powder
1 tsp. cream of tartar
9 eggs (separated)
1/2 c. water
1/2 c. oil
1 tsp. lemon extract

Directions:
Directions:
1. Sift flour, 1 c. sugar, salt, and baking powder together.
2. Make a well and add oil, egg yolks, water, and lemon extract.
3. Beat until smooth.
4. Beat egg whites until stiff, gradually adding remaining 1/2 c. sugar and cream of tartar.
5. Fold egg yolk mixture gradually into egg whites.
6. Batter will be smooth and fine textured. Pour into ungreased tube pan.
7. Bake at 350º for 45 minutes.
8. Invert pan to cool.
