2 c. all purpose flour
2 tsp. baking powder
1 1/2 tsp. soda
2 c. grated carrots
2 c. sugar
4 eggs
1 tsp salt
2 tsp cinnamon
1 sm. can crushed pineapple (optional) - do not drain
3/4 c. chopped pecans (optional)

Cream Cheese Frosting:
2 3-oz pkgs of cream cheese
2 T cream (condensed milk is ok)
5 c. Sifted powdered sugar
1 1/2 tsp vanilla

Directions:
Directions:
Sift dry ingredients and set aside, except sugar. Mix oil, sugar and eggs beating after each addition. Add dry ingredients and mix well. Add carrots, pineapple and nuts. Put in a greased and floured pan (13x9x2 1/2). Bake at 325º for 35 minutes (or longer depending upon oven). Cool and then frost with cream cheese frosting.

Cream Cheese Frosting: Soften Cheese and blend in milk, gradually stir in sugar - add vanilla and blend well.
