1 block firm tofu (drained & mashed)
2 eggs (well beaten)
1 tsp. salt
3/4 c. mayonnaise
1 large carrot (grated)
3-4 shiitake mushroom (soaked & chopped)
2 stalks green onions (chopped)
1/2 can water chestnuts (minced)
1/2 block kamaboko (chopped)
cornflake crumbs or bread crumbs

Directions:

1. Combine all ingredients in bowl. Mix well.
2. Spray a 8x8 pan with PAM cooking spray and pour ingredients into it.
3. Sprinkle cornflake crumbs on top.
4.Bake at 350º for 40-45 minutes until slightly puffed and golden brown.
