1 ½ cups white or yellow cornmeal
½ cup flour
1 tsp. salt
1 tsp. sugar
3 level tsp baking powder
½ tsp. baking soda
1 egg
1 ½ cups buttermilk (you could use a combination sour cream, yogurt, and buttermilk)
¼ cup melted shortening, oil, or butter

Directions:

Mix all dry ingredients. Add part of the milk. Add egg, rest of milk and oil. Mix well but do not over-mix. Add a little more milk if necessary. Batter should be the consistency of ordinary cake batter. You can add onion, corn, jalapenos, etc. Bake in greased and floured cake pan. I use a heated cast iron square pan. Bake at 400 – 450 degrees for about 30 minutes.
