4 nice, thick pork chops (preferably bone-in)
1 large, yellow onion
2 large cloves garlic
1 cup apple cider
3 Tbsp. Dijon mustard
1/2 tsp. thyme
salt & pepper to taste

Directions:
Directions:
Brown pork chops in a bit of olive oil over medium-high heat on both sides for a few minutes (until nicely colored). Remove from pan and keep warm. Meanwhile, sautee sliced onions over medium heat in the same pan until soft and golden. Add chopped garlic and cook one minute more. Add cider, dijon, thyme, salt and pepper and mix through. Push onion mixture to sides of pan and place chops in center of pan (with any juices accumulated). Cover and simmer over medium-low heat for about 20 minutes, or until chops are tender and cooked through.
