Grandma's Suet Pudding Recipe

For pudding:
1 C milk
2 beaten eggs
3 c flour
1 tsp baking powder
1 large cup brown sugar
1 cup suet finely ground or fine chopped
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 lb raisins

add nuts or dates if you like

For Sauce:
2 TBLS corn starch
2 cups brown sugar
1 tsp vanilla
2 Tbls butter
may add a little rum flavoring

For Pudding:
Mix together and steam . . . put in 1 lb coffee tins (greased.) Cover the tins with cooking paper (waxed paper) and bind with rope.
Steam in pressure pan 45 minutes. Would take about 2 hrs in regular steamer. Could possibly use a rice cooker for a couple of hours.

For Sauce:

Put in 2 cups of boiling water, cook until smooth and clear.

To Serve:
Place in small pudding bowls and serve hot covered with a generous portion of sauce. Make sure sauces is hot as well - but not boiling.

This is a very rich and sweet pudding, so do not serve large portions of it. One batch makes enough for 10 - 16 people depending of the serving size.

It goes well with coffee after a turkey dinner.
