Can of Italian plum tomatoes, drained and chopped, 1/2 cup beef stock, 4 garlic cloves, minced, 4 tbsp chopped parsley, 1 tbsp rosemary, 1/2 tsp ground cinnamon, 1/4 cup olive oil, 5 1/2 - 6 lbs of short ribs of beef, 1 tsp coarsely ground black pepper, 1 large onion, slivered, three carrots, minced, three stalks of celery, minced, 1/2 cup dry red wine

Preheat oven to 350º. In a bowl, mix together the tomatoes, stock, garlic, parsley, rosemary, and cinnamon. Set aside. Heat oil in skillet and brown the ribs over medium heat adding pepper. Place in a shallow roasting pan. Add onion, celery and carrots to skillet and saute 5 minutes. Add to short ribs, Pour wine into skillet and deglaze pan, scraping up any brown hits, about 4-5 minutes. Pour over ribs. Add the tomato mixture to ribs and stir. Cover pan with aluminum foil and bake 2 1/2 hrs. Remove foil and bake another 15 minutes. Skim off any grease and serve. Great with mashed potatoes or wide noodles.
When serving short ribs, allow about 3/4 to 1 lb per person
