1 large eggplant
1 onion
1 stick of butter
3 tbsp of cracker meal
2 eggs
1 cup milk
grated Parmesan cheese

Directions:
Directions:
Cut eggplant length wise.
Boil in salt water for 10 minutes.
Brown minced onion in butter.
Peel eggplant and mash with a fork.
Cook over medium heat.
As you mix eggplant add milk, cracker meal and eggs.
Place mixture in oven dish and broil in oven with cheese sprinkled over it.
