1 large zucchini
3/4 c. white sugar
1/4 c. brown sugar
1 1/2 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. nutmeg
1 1/2 tsp. cream of tartar
1/4 tsp. salt
3 T. flour
1 T. lemon juice
butter optional
Directions:
Directions:
Seed and peel zucchini and slice as apples. Cover with water and boil 2 minutes. Cool and drain. Mix all ingredients and add to zucchini. Mix well. Pour in pie shell and top with pie crust. Seal and poke holes in the top. Bake at 375º for 30 - 45 minutes.
