4 oz. cream cheese
8 eggs
dash ground black pepper
2T sliced green onions with tops (optional)
2 packages (8 oz. each) refrigerated crescent rolls
2 oz. cheddar cheese (1/2 cup)
1/2 cup milk
1/4 tsp. salt
1/4 cup red bell pepper, chopped
1 tsp. butter or margarine
1/4 pound thinly sliced deli ham

Preheat oven to 375º. Chop bell pepper, green onions (if desired), and ham; set aside. Beat 7 eggs, adding salt and pepper to taste. Separate 1 remaining egg using an egg separator and reserve the egg white. Add the yolk to the 7-egg mixture. Melt butter in frying pan over medium low heat. Add egg mixture, scrambling until almost done. Add cream cheese, ham, and red pepper and continue cooking until eggs are set but still moist. Remove pan from heat. Unroll 1 package of crescent dough but do not separate the wedges. Arrange longest side of dough across width of a 12x15 baking pan. Repeat with remaining package of dough. Press seams together. Spoon egg mixture down center of dough and top with cheddar cheese. On the longest sides of dough, cut strips 1 1/2" apart, approximately 3" deep. To braid, lift strips of dough across filling to meet in center, twisting (if desired) each strip one turn. Continue alternating strips to form a braid. Lightly brush the braids with reserved egg whites. This will give a nice shine to the crust when it is baking. Bake 25-28 minutes or until golden brown. Cut into slices using a pizza cutter.
